Cream Cheese Chicken Chili!
Hey guys! Okay so I know that chili is sortof a winter meal, but it was raining today, and I couldn't help myself! It took me literally five minutes to throw it together. This chicken chili turned out delicious and me and my husband loved it! I am probably going to take it to work tommorow for lunch!
1 can of black beans, undrained
1 can of corn, undrained
1 can of Rotel tomatoes and chilis (I used Mild)
1 package of Ranch dressing mix
1 tsp cumin
1 tsp onion powder
1 Tbsp chili powder
1 8 oz package of light cream cheese
2-3 chicken breasts
Combine frozen or raw chicken, corn, beans, rotel, ranch, spices, into slow cooker and stir together. Place cream cheese on top. Cover with lid & cook 6-8 hours on low. 30 minutes before serving, stir in cream cheese and shred chicken with two forks. We ate this with fritos, sour cream, and cheese. It was delish!
